If you can't feel the difference between falling and floating, what is gravity really?

An astronaut in orbit and a person who just stepped off a ledge are both weightless, both simply falling. If gravity disappears the moment you stop resisting it, in what sense is it a 'force' at all?

Newton's picture, an invisible pull across empty space, predicts orbits beautifully and is still taught. Einstein's picture of curved geometry predicts the same orbits plus GPS drift. When two pictures predict differently, which one is 'true,' and how would we decide?
